S'mores - A Life Long Love

I love s'mores! They are one of my favorite things in the whole wide world. If I ever get married I don't want a wedding cake, I just want s'mores. That is how much I love them! Three simple ingredient combined to make something messy, magical, and nostalgic: campfire roasted marshmallow, a chocolate bar, sandwiched between graham crackers. My favorite dress-up version is roasted marshmallow, a good quality dark chocolate bar, with Nyakers gingersnaps. The flavors are so much more complex! Try it, and you will not be sorry. It is not just the flavors of s'mores that make them special, it is also the experience. I love gathering around a campfire roasting marshmallows, and getting ooey gooey marshmallow and chocolate all over the my fingers and face while laughing with the people I love.

At Eat Cookie Co, we have been talking about doing a s'mores cookie for a while. Both my sister, and I have done different variations in the past, but none of them seem special enough for our customers. Then I saw this idea of using premade cookies, topping it with marshmallows, dipping in chocolate and graham cracker crumbs. I knew at once, this was the right direction for an ultimate s'mores cookie. I tested it with my salted brown butter chocolate chip cookie, lightly baking the marshmallows on top so that they "glue" onto the cookie, getting my culinary torch out I flambé the marshmallows till they are campfire roasted, and dip in semi-sweet chocolate and graham cracker crumbs. Finally a cookie that truly invokes the magic of s'mores! It is gooey and rich, so full of flavor and texture! Is anyone else drooling? Do you have a childhood treat that brings invokes nostalgia?
